Does it get better than potatoes? I think not.
| | Yes, you read that right. Potatoes with every meal. Maybe that is a bit excessive, but during these pandemic times, I have been eating potatoes practically every day. And since February is National Potato Lovers' Month, what better time to share my ode to the spud.
Potatoes are my comfort food of choice because not only are they delicious, but there are so many ways you can make them so you'll never get bored. French fries? A no brainer, and way easier to make at home than you'd think. Baked potato? Basically the warm fuzzy blanket of food. Hashbrowns? They make every breakfast feel like brunch! And don't even get me started on throwing potatoes in the air fryer. That's how you take a potato from great to AMAZING.
You can eat them as a side dish, they're filling enough as a main dish, you can turn them into a warm and cozy soup, and you can bake them on top of a pot pie. They're one of the few foods that only get better the more you cook them, and they're the perfect vessel for so many other foods.
In a world where it seems like so much is unreliable, there is the potato, ready to comfort you with it's warm, starchy, fluffy goodness.
