These are a few of my favorite things.
| | Baby, it's cold outside...
This is the time of year where I love to curl up on my couch with a cozy knitted blanket, oversized jammies, fluffy socks, and a cup of my favorite, soul-warming soup: butternut squash soup. Recently, I've been swapping out the soy milk for coconut milk and adding a chopped Granny smith apple with the mirepoix, for a little extra sweetness, and the result has been perfection!
Once I have my soup in hand, I snuggle into a pile of couch pillows with my pup, because let's be honest, who doesn't want to snuggle into a nest of comfy down with their doggo? And binge-watch some holiday movies while sipping on flavorful ginger root tea. So far I've watched Home Alone, The Santa Clause, and The Muppets Christmas Carol. (The 90s called—they approve of these classics.)
For heartier winter meals, I tend to lean more towards my crockpot, creamy pasta dishes, and a variety of mac and cheese recipes. (Can never have too many, in my humble opinion.)
When I'm feeling like combining my hankering for cheesy goodness with a pint, I whip up this beer cheese soup and serve it in a bread bowl, because carbs are delightful. There, I said it.
These fun traditions have helped get me into the holiday spirit, especially when this year has been anything but traditional.
