Is there anything more comforting?
I don't know about you, but as soon as the temperatures start to drop in the fall, I start to lean heavily on pasta for dinner. I no longer have to worry about overheating my kitchen in the summer heat, and there's nothing cozier or more comforting than a big bowl of pasta with meat, cheese, or veggies (or all of the above) as the days start to get shorter.
The versatility of pasta is no secret. As I make the transition to fall I find myself reaching for more pantry ingredients to fill out my meals, like in this simple yet flavorful lemon and sardine pasta. And old favorites like spaghetti and meatballs, mac and cheese, and pasta casseroles begin making their way into my weekly rotation again.
On weeknights, easy shortcut recipes like skillet lasagna or bubbling baked pastas are my go-tos, while I'll save the labor-intensive (but totally worth it) lasagna for a Sunday when I have more time—and bonus, it makes great leftovers for the week.
On days when I'm craving something that feels luxurious, I'll make this restaurant-quality cacio e pepe pasta, which uses fairly simple ingredients but tastes oh-so-decadent. My husband and I are also determined to learn how to make ravioli this fall for one of our at-home date nights.
