Before you start chucking beautiful summer produce at my face, hear me out. While the farmer's market is my favorite place to spend the warmer months and there is nothing like a watermelon wedge on a hot summer evening, I am not spending as much time in my kitchen when the temperature ticks above 80 degrees.
Fall is the time where my kitchen starts to come alive, and when I can finally turn on my oven without overheating my apartment. Soups, stews, casseroles, pies: you name it, fall's got it.
First on my list of things to cook this fall are soups and stews. They are the backbone of the autumnal comfort food line up. Easy to make (especially with an Instant Pot) and full of flavor, they fill you up and add some spice and warmth to a chilly night. Plus, there are so many different types you can make, and they can easily be vegetarian- and vegan-friendly.
There are few things I love as much as potatoes, so this potato soup always makes it into my fall rotation. A cauliflower, potato, and cheese soup feels indulgent, but it's actually good for you. It doesn't get more classic than tomato soup, and it's so easy to make, you'll never buy store-bought again. And all the canned beans I've been stockpiling in my pantry will come to life in this aromatic and nutrient-rich 15-bean soup.
