While lockdowns have eased in New York City, I'm still separated from my family, waking up most nights with anxiety, and missing what life used to be like. So food has been a saving grace.
While ordering pizza from my local spot never gets old, I'm trying to switch up my diet and experimenting with healthier forms of comfort food. Enter: tacos. They're so versatile, instantly satisfying, and one of the easiest things you can make at home. Needless to say, I've been making them once or twice a week, and not just for dinner.
My first foray into homemade tacos was pulled pork (a classic), which is incredibly easy to make in the slow cooker. If I have a couple of chicken breasts on hand, I'll opt for shredded chicken instead. These grilled shrimp tacos absolutely sing of summer, and make a light and quick weeknight meal.
With tacos, there's plenty of room for experimentation. I whipped up some incredible Korean beef tacos a few weeks ago, and topped them with sliced carrots, radishes, and jalapenos. And you don't have to be vegan to enjoy these cauliflower tacos, which will make you forget you've even gone meatless. While I don't always make my own tortillas, whether you prefer the corn or flour varieties, they're simple enough to whip up a batch and freeze for future use.
